After Eight Mint Chocolate Cake
Chocolate sponge cake – 1 cut in 2 layers, 1 layer place in 9 inches spring foam pan.
In a pan, add milk, 4 egg yolks, 3 tbsp sugar, and cook until sugar dissolves.
Don’t over cook; just heat up, until sugar mixes well. Divide this custard in 2 parts.
In 1 part add melted chocolate, warm little bit.
Then add 2 tbsp coco powder, vanilla or chocolate essence, half quantity of gelatine mixture, half whipped cream, half egg whites, mix well and pour this mixture on cake layer, put in freezer until set.
When 1st layer of custard set, then in a bowl, add remaining custard, remaining gelatine, remaining cream, egg whites (beat with 3 tbsp sugar), pepper mint essence, green colour, mix well.
Now place 2nd layer of cake on settled custard and pour mint mixture on top.
Again put in freezer to settle down.
When its done, decorate with whipped cream, and chocolate chip.
