This breezy and cold weather I would love to have this amazing lemon drizzle cake with homemade cappuccino while sitting of front of the TV, watching my favourite show. Yes! Today I am going to share my family’s favourite cake recipe of carrot cake. Very easy and quick recipe, no mixer just whisk together all ingredients. Lemon cake gives you aromatic flavour of lemon while baking. Have a try and you would say wow! Incredible flavour of lemon, you could not stop yourself until last bite.
Grease and flour a 9×5-inch loaf pan and set aside. Strain flour, baking powder and salt; set aside.
In a bowl add eggs, sugar, sour cream or yogurt, and mix with whisk until smooth and combined. Gradually add oil while whisking. Then add lemon zest, lemon essence, and whisk.
Now add flour mixture and stir until just combined, don’t over mix.
Some lumps will be present and that’s okay, don’t try to stir them smooth.
Pour the batter out into prepared pan, bake in preheated oven on 180C = 350F = Gas Mark 4 for about 50 to 52 minutes or until toothpick inserted in the center crack comes out clean or with a few moist crumbs but no batter.
In the last 10 minutes of baking, loosely cover the cake with foil to prevent excessive browning on the top and sides of bread before center cooks through.
Allow cake cool down completely before glazing.
You can double quantity of recipe and can bake in bundt cake pan.
