Baba Ganoush, English – Urdu Recipe

Baba Ganoush

Ingredients:

  1. Egg plants – 2
  2. Lemon juice – 2 tbsp
  3. Salt – to taste
  4. Gherkins – 1
  5. Oil- 1 tbsp
  6. Garlic – 4 cloves
  7. Tahini paste – 3 tbsp
  8. Olive oil – as required
  9. Chopped nuts – as you like

Method:

Preheat a boiler. Prick the eggplant skin with a fork or skewer to allow steam to escape while cooking. Boil the eggplants for about 15 to 30 minutes, turning frequently until the eggplants are charred and slightly wrinkled. Let the eggplants cool down, split the eggplants and scoop out the flesh. Discard the skin. Using a fork, squeeze out excess moisture from the eggplants and drain the bitter liquid. Mash the eggplants with a fork until creamy. Take a pan and heat up oil, fry garlic cloves until light brown and chop thinly and mix in eggplants mixture. Now chop gherkins and mix as well, then add tahini paste, lemon juice and salt and mix nicely and slowly.

To Serve:

Drizzle with olive oil and coarsely chopped nuts. Serve with freshly baked pita bread wedges.
