Ingredients:

  1. Gram flour – 2 cups
  2. Baking powder – 1 tsp
  3. Salt – 1/2 tsp
  4. Garam masala – 1 1/2 tsp
  5. Cumin seeds – 1 tsp
  6. Turmeric powder – 1/2 tsp
  7. Red pepper – 1/2 tsp (optional)
  8. Dried cilantro – 1 1/2 tsp
  9. Fresh coriander – 3 tbsp
  10. Small cauliflower – 1/2 head chopped into bite-size pieces
  11. Medium onion – 1 finely chopped
  12. Peas – 1/3 cup (fresh/frozen/canned)
  13. Medium carrot – 1 grated
  14. Small potato – 1 grated
  15. Olive oil – to grease baking sheet

Directions

  • Preheat oven to 500°F (260°C).
  • In a large bowl, mix together dry ingredients (down to the dashes in the ingredient list).
  • Stir in enough water to create a batter, almost pancake-batter consistency, but a little thicker, It took me about 1 ¼ cups of water.
  • Prepare veggies, and then dump them all into the batter, mixing to coat well.
  • Using a spoon, take scoops of battered veggies and drop onto well oiled baking sheet – like when making drop cookies.
  • Bake for 8 minutes, then flip and bake another 10 minutes, until golden brown.
  • Once out of the oven sprinkle chat masala.
  • Serve with Raita, Ketchup, or Hot Sauce.
