How to Make Bara Masala Biryani, English / Urdu Recipe

Bara Masala Biryani

Ingredients for chicken stock:

  1. Chicken – 1 kg
  2. Onion – 1 cut in 4 pieces
  3. Salt – to taste
  4. Dry coriander – 2 tbsp
  5. Star anise – 1
  6. Cumin seeds – 1 tbsp
  7. Ginger – 4 pieces
  8. Fennel seeds – 1 tbsp
  9. Garlic cloves – 6
  • Put all above ingredients in muslin cloth and make a packet.
  • Now take a pan, put chicken, muslin cloth packet and 2 cup of water, cook until chicken done and water dries.

Ingredients for yogurt:

  1. Ghee – 1 tsp
  2. Yogurt – 250g
  3. Garlic paste – 1 tsp
  4. Salt – 1 tsp
  5. Turmeric – ¼ tsp
  6. Red chilli powder – 1 tsp
  7. Coriander powder – 1 tsp
  8. Garam masala powder – 1 tsp
  9. Nutmeg powder, mace powder and cardamom powder – take all three in equal quantity, grind and use ½ tsp

All these ingredients mix well in yogurt.

Ingredients for boil rice:

  1. Rice – ½ kg
  2. Cinnamon stick – 2
  3. Bay leaf – 1
  4. Cloves – 6
  5. White cumin seeds – ½ tsp
  6. Black cumin seeds – ½ tsp
  7. Salt – 2 tbsp

Boil rice with above masala and drain water.

Ingredients for garnishing:

  1. Onion – 2
  2. Kewra water – 1 tbsp
  3. Orange food colour – few drops
  4. Dry plum – 6
  5. Mint, fresh coriander and green chillies – as required
  • Take a pan, put oil or ghee, heat it up, add sliced onion and fry until golden brown.
  • Then add yogurt mixture and fry well.
  • Then add chicken and fry well.
  • Now add plum and mix well.
  • Now move chicken to the sides, pour the green masala, then kewra water (mix food colour), then boiled rice and on top pour little bit oil and put on dum for 20 minutes.
  • Serve with salad and raita.
