Baray Mian Ki Mutton Biryani

Ingredinets:

  1. Mutton – 750 kg
  2. Rice – 750 gm
  3. Fennel seeds – 1 tbsp
  4. Dry corainder seeds – 1 tbsp
  5. Cumin seeds – 1 tbsp
  6. Ginger chopped – 2 tbsp
  7. Chopped garlic – 2 tbsp
  8. Black pepper – 8
  9. Bay leaf – 1
  10. Cinnamon stick – 1
  11. Cloves – 4
  12. Green cardamoms – 6
  13. Fried onion – 1 cup
  14. Red chili powder – 2 tsp
  15. Garam masala powder – 1 tsp
  16. Ghee or oil – 1 cup
  17. Salt – 2 tsp
  18. Coriande powder – 1 tsp
  19. Yogurt – 1 cup/ 250 gm
  20. Kewra – 2 tsp
  21. Yellow food color – 1/4 tsp
  22. Orange food color – 1/4 tsp

Method:

  • Put fennel seeds, dry coriander seeds, cumin seeds, ginger and garlic in muslin cloth and make masala bag.
  • In a pan, add mutton, masala bag, 5 glasses of water, whole garam masala and salt, cook until mutton is done.
  • Then sqeeze masala bag and discard.
  • Then take a pan, heat up ghee or oil, then add fried onion along with mutton, salt, red chili, garam masala powder, coriander powder and yogurt, fry well.
  • Then add stock, bring to boil and add soaked rice.
  • Cover and cook until water dries.
  • Then pour food colors mix and kewra, put on dum for 20 minutes.
