Best Carrot Cake Recipe 

Carrot cake closely resembles a quick bread in method of preparation. Carrot cake is often referred to as Passion cake. This is the best Carrot Cake Recipe. Carrot cake was voted as the favorite cake in the United Kingdom, according to a survey in the Radio Times in 2011.
This cake is very delicious, and you probably haven’t tried this before.

Ingredients:

  1. All Purpose Flour – 1 cup
  2. Sugar – ¾ cup
  3. Eggs – 2
  4. Baking Soda – ¾ tsp
  5. Ground Cloves – 1 pinch
  6. Salt – ¼ tsp
  7. Baking Powder – ½ tsp
  8. Ground Ginger – 1 pinch
  9. Vegetable Oil – ½ cup
  10. Fresh Orange Zest – ½ tbsp
  11. Brown Sugar – 2 tbsp
  12. Cinnamon powder – 1 tsp
  13. Nutmeg powder – 1 pinch
  14. Desiccated coconut – 1/3 cup
  15. Walnuts – ¾ cup chopped
  16. Vanilla Extract – 1 tsp
  17. Crushed Pineapple, drained – 4 rings
  18. Finely Grated Peeled Carrot – 1 cup
  19. Pineapple juice – ½ tbsp

Method:

  • In a large bowl, add sugar, eggs, oil and brown sugar, beat well.
  • In a separate bowl, strain flour, baking soda, baking powder, clove powder, ginger powder, cinnamon powder, nutmeg powder and salt.
  • Now add dry mixture in egg mixture and beat on low speed, mix well.
  • Now add vanilla essence, orange peel, coconut, walnuts, pineapple, pineapple juice and grated carrots, mix well and beat for 1 minute.
  • Pour this mixture into prepared 7 inch cake pan.
  • Bake at 180ºC, gas mark 4 for 35-40 minutes.
  • Allow to cool completely in pan for 1-2 hrs before removing to ice with cream cheese icing.

Cream Cheese Icing:

Ingredients:

  1. Unsalted butter, softened – 4oz/100gm
  2. Cream Cheese, softened – 8 oz
  3. Icing sugar – 1 cup
  4. Vanilla Extract – 1 tsp
  5. Almond essence – 1 drop

Method:

  • In a large bowl, cream the butter with a hand mixer, then add cream cheese and beat for 2 minutes or more until it’s mixed well.
  • Now add icing sugar, vanilla and almond extracts and mix well.
  • Carrot Cake is ready to eat.
