This Brunch Pie by Shireen Anwer is a real treat for brunch. You can make it as breakfast, as lunch or as dinner. It is very simple, flexible dish that is perfect for either brunch or a healthy breakfast.

Brunch Pie by Shireen Anwer

Ingredients for short crust pastry:

  1. Butter – 4 ounce
  2. Flour – 8 ounce
  3. Egg yolk – 1
  4. Salt – 1/2 tsp
  5. Chilled water – to knead

Method for short crust pastry:

  • Take a bowl, add butter, flour, egg yolk and salt, mix well until becomes bread crumbs.
  • Then make dough with the help of chilled water and leave for 15 to 20 minutes.

Ingredients for filling:

  1. Hunter chicken or chicken tikka chunks – 1 cup
  2. Grated cheddar and mozzarella cheese – ½ cup
  3. Onion chopped – 2 tbsp
  4. Sweet corn – 3 tbsp
  5. Capsicum chopped – 3 tbsp
  6. Mushrooms – 4 chopped
  7. Eggs – 3 beaten
  8. Cream – 1 packet
  9. Salt – ¾ tsp
  10. Crushed red chili – 1 tsp
  11. Mixed herbs – 1 tsp

Method:

  • Take a bowl, add eggs, cream, salt, red crushed chili and mixed herbs, mix well with hand whisk and set aside.
  • Roll down short crust pastry, spread in a greased pie plate, prick and bake for 10 minutes on 180 degree.
  • Then spread hunter chicken or tikka chunks, sprinkle cheese, then mushrooms, capsicum, onion, corn and cheese.
  • Finally pour egg and cream mix and bake for 35 to 40 minutes on 180 degree preheated oven.
