It uses cauliflower rice instead of regular white rice, and it is even more delicious than what you might be used to. Cauliflower Fried Rice Low Carb

Ingredients:

  1. Eggs – 2
  2. Chopped garlic – 1 tsp
  3. Boneless chicken chunks – 200 g
  4. Black pepper – 1/2 tsp
  5. Red chili flakes – 1/2 tsp
  6. Salt – to taste
  7. Frozen or fresh beans – 1/4 cup
  8. Spring onions – 1 tbsp
  9. Cauliflower rice – 2 cups
Healthy Cauliflower Rice Recipe

Method:

  • Beat 2 eggs.
  • Heat up 1 tbsp of oil and make scrambled eggs. Set aside.
  • Take another pan and heat up 1 tbsp of oil again.
  • Saute chopped garlic, and then add boneless chicken chunks.
  • Now add black pepper, red chili flakes and salt.
  • Once the chicken is done, add frozen beans and spring onions.
  • Mix well and add the scrambled eggs and cauliflower rice.
  • Serve and enjoy.
