Creamy Mango Delight

 

Creamy Mango Delight is an excellent dessert for summer, in case mango not available due to season or some other reason, you can use any kind of fruit instead of mango.

Creamy Mango Delight

Ingredients for Sponge Cake:

  1. Flour – 75g
  2. Eggs – 3
  3. Baking powder – ¾ tsp
  4. Sugar – 75g
  5. Vanilla essence – ½ tsp

Method:

  • With an electric mixer, whisk eggs and sugar on HIGH speed for about 5 to 7 mins, until the batter doubles in volume.
  • Then add sifted flour, vanilla essence and baking powder into the batter.
  • With a spatula, gently fold in the flour until it’s well blended.
  • Pour the batter into the Greased “7 cake pan, and bake on Pre-heat oven to 180ºC and gas mark 4 for 25 to 30 minutes, when it’s done, let it cool down completely and cut in 2 layers.

Ingredients for Filling:

  1. Eggs – 3
  2. Milk – 1 ½ cup
  3. Mango cubes – 2 cups
  4. Sugar – 8 tbsp
  5. Gelatin powder – 1 ½ tbsp (dissolve in ¼ cup mango juice)
  6. Whipped cream – 8 ounce
  7. Mango juice – ¼ cup
  8. Flour – 1 tbsp
  9. Beat egg whites separate until stiff foam

Method:

  • Take a pan, add egg yolks, milk, flour and sugar, and cook until sugar dissolves.
  • Dissolve gelatin in mango juice and heat it up on double boiler.
  • When sugar dissolves in milk and thickens, add gelatin mixture, mix well and take out from the cooker, now add whipped cream, egg whites and mango cubes.
  • Then place one layer of cake in cake pan, pour this half mixture on cake, then place 2nd layer of cake and pour remaining mixture.
  • Keep in fridge until it settles down.
  • Then decorate with whipped cream and serve.
