Ingredients for sauce:

  1. Talhar Mirch or kashmiri mirch – 3 to 4
  2. Dry whole red chili (button) – 10 to 12
  3. Dry red chili (long) – 5 to 6
  4. Water – as required
  5. Oil – 2 to 3 tbsp
  6. Garlic cloves – 3 to 4 minced
  7. Cumin seeds – 1 tsp
  8. Ajwain – 1 pinch
  9. Whole black pepper – 12 to 15
  10. Ginger paste – 1 tbsp
  11. Salt – to taste
  12. Curry leaves – 15 to 20
  13. Lemon juice – 1 tbsp

Method:

  • Take a pan, add talhar mirch, round red chili, whole dry chili, cook until all three types of chilies soften.
  • Meanwhile, take another pan, heat up oil and sauté minced cloves, cumin seeds, ajwain and black pepper, stir fry.
  • Then add ginger paste, mix and add this mixture in chilies pan. Cook for 4 to 5 minutes on low heat, now grind this sauce in a hand held blender or in a jug. Pour back blended sauce in the pan.
  • Now add salt, curry leaves and lemon juice, cook for 5 minutes until sauce thickens.

Ingredients for BBQ:

  1. Mutton liver – 200 gm cut in slices
  2. Mutton kidneys – 4 to 5 cut in slices
  3. Chicken sausages – 3 cut in 1 inch cubes
  4. Chicken breast – 1 cut in cubes

Preparation:

  • Add all meat in a bowl and marinate with prepared chili sauce.
  • Skew in skewers, BBQ, grill or cook in a grill pan with little bit of oil.
  • Serve with salad, grilled vegetables and yogurt mint raita.
