Fried Trout with Ginger

•    4 trout (cleaned)
•    1/4 tsp ground turmeric
•    1 tbsp cilantro (chopped)
•    2 fresh green chillies (seeded & chopped fine)
•    salt & pepper
•    vegetable oil (for brushing fish not deep-frying)
•    2 tbsp ginger garlic paste
•    coriander springs and lime wedges (garnish)


•    Preheat boiler to medium
•    Mix the ginger garlic paste, coriander, turmeric, 1 tsp of pepper, pinch of salt together in a small bowl
•    Stir in enough water to make a paste
•    Using a sharp knife, make slashes on each trout diagonally (both sides)
•    Rub the spice mixture into the fish (especially into the slashes)
•    Brush trout with oil and cook under the hot broiler for 15 min
•    Turn trout once and brush with more oil
•    Cook till fish flakes easily
•    Transfer to warmed serving plate and garnish with coriander and lime wedges
•    Serve immediately
