Delhi Ki Degi Biryani

Ingredients:

  1. Chicken or Mutton – 2kg
  2. Ginger-Garlic paste – 2tbsp
  3. Salt – to taste
  4. Cloves – 6
  5. Ghee – 1 cup
  6. Whole Black Pepper – 6
  7. Green Cardamoms – 5
  8. Onions – 3 whole
  9. Green Chilli paste – 1 tbsp
  10. Ginger flakes – 2 tbsp
  11. green cardamom powder – 1/2 tsp
  12. Kewra water – 2 tbsp
  13. Nutmeg and mace powder – 1/2 tsp

Method:

  • In a pan put 3/4 cup of ghee, and whole garam masala, cook it for a while and then add ginger-garlic paste, green chilli paste, onions, and fry for 2 minutes.
  • Now add the meat, and fry until it turns white.
  • Add 1/2 cup of water and salt, cook until the meat is done and the water dries.
  • Discard onions, spread ginger flaks on cooked meat, then nutmeg, mace powder, green cardamom powder, then yogurt mixture, then kewra water, then boiled rice, and on top pour ¼ cup ghee and put on dum for 15 to 20 minutes.
  • Serve with mint sauce and red chilli sauce.

For Yogurt Mixture:

  1. Yogurt – 500g
  2. Yellow food colour – ¼ tsp
  3. Sugar – 1 tsp
Put sugar and food colour in yogurt and mix well.

Ingredients for Rice

  1. Rice – ½ kg
  2. Cloves – 5
  3. Cinnamon sticks – 3
  4. Whole Black Pepper – 5
  5. Salt – 1tbsp
  6. Bay leaf – 1
  7. Green Cardamoms – 5
  8. Cumin Seeds – ½ tsp

Method:

Put all the spices in water with rice and boil.
