Fried Aloo aur Baingan ki Sabzi
Ingredients:
- Aloo (potato) β 250g
- Baingan (eggplant) β 250g
- Chopped tomato β 250g
- Mustard seeds β Β½ tsp
- Onion seeds β Β½ tsp
- Red chilli powder β 2 tsp
- Fennel seeds β Β½ tsp
- Turmeric powder β Β½ tsp
- Salt β to taste
- Green chilli β 6
- Fresh coriander β 2 tbsp
Method:
- Fry vegetables in oil, take them out from the oil.
- Then in pan, heat up oil, add tomato, mustard seeds, onion seeds, red chilli powder, fennel seeds, turmeric powder and salt. Cook until tomato becomes soft.
- Then put fried vegetables and put on dum for few minutes.
- Garnish with green chilli and fresh coriander and serve.
