Fried Bhindi (okra)
Ingredients:

Bhindi (Okra) – ½ kg
Onion – 2
Tomato – 2
Green chilli – 6
Ginger garlic paste – 1 tbsp
Fresh coriander – ½ bunch
Ginger – 1 inch piece
Fried ground cumin seeds – 1 tsp
Mustard seeds – ½ tsp
Kalwanji (onion seeds) – ½ tsp
Red crushed chilli – 1 tbsp
Salt – to taste
Oil – 4 tbsp

Method:

Cut okra into ½ inch slices. Deep fry okra in hot oil until light brown; drain on paper towels. Then take a wok, add oil, heat it up, then add cumin seeds, after 1 minute add ginger garlic paste, onion, mustard seeds and red crushed chilli and fry well. When onions become soft, and then add chopped tomato, chopped green chilli and chopped coriander, fry on high heat. Now add salt and fried okra, fry for 2 more minutes and cover. Put on steam for few minutes and serve with chapattis.
