Low Fat Dry Fruit Cake

Ingredients:

Red flour or chapatti flour – ½ kg

Brown sugar – 1 cup

Eggs – 4

Oil – ½ cup

Roughly chopped Almond – ¼ cup

Baking powder – 1 tbsp

Raisins – ¼ cup

Walnuts – ¼ cup

Black currants – ¼ cup

Vanilla essence

Salt – ¼ tsp

Yellow food colour – 1 pinch

Method:

Beat oil and sugar well, during beating add eggs 1 by 1 and vanilla essence. Beat until sugar dissolves. Strain flour, salt and baking powder and add in egg mixture, mix well. Then add dry fruits and mix well. Take 2 loaf cake pans and pour this mixture, bake on 180 degree centigrade and gas mark 4, for 40 to 45 minutes.
