Dal ki Khasta Kachori aur Aloo ki Tarkari

Ingredients for dough:

  1. All purpose flour – 2 cup
  2. Salt – 1/2 tsp
  3. Melted ghee – 4 tbsp

  • Make soft dough with warm water, cover and leave for 15 minutes.

Ingredients for filling:

  1. Yellow lentil (Moong dal) – 1/2 cup (soaked overnight and rougly grinded)
  2. Oil – 2 tbsp
  3. Asafoetida – 1 pinch
  4. Cumin seeds – 1 tsp
  5. Crushed dry coriander seeds – 1 tsp
  6. Fennel seeds – 1 tsp
  7. Ginger paste – 1 tbsp
  8. Thinly chopped green chili – 1 tbsp
  9. Red chili powder – 1 tsp
  10. Salt – to taste
  11. Garam masala powder – 1 tsp
  12. Gram flour – 5 tbsp
  13. Amchoor powder – 1 tsp or lemon juice 1 tbsp

Method:

  • Heat up oil in a pan, stir fry asafoetida, cumin seeds, dry coriander seeds and fennel seeds for 2 seconds.
  • Then add ginger paste and green chilies, fry for 2 seconds.
  • Then add red chili powder, salt and garam masala powder, fry for 15 seconds.
  • Then add gram flour and fry for 2 to 3 minutes, add roughly grind moong daal, amchoor powder or lemon juice, mix and cook for 5 minutes on low flame.
  • Now divid dough lemon size balls, now flatten the dough balls and spoon about 2 to 3 tbsp of the daal mixture in the center.
  • Bring the edges up to cover and seal, and place in a greased plate.
  • Fry oil, gently roll the kachori with rolling pin and fry until golden brown.
  • Remove from oil, drain on a paper towel and serve with aloo bhujia and mint chutney.
