Murgh Musallam with Rice

Ingredients for Chicken Marination:

  1.  Whole chicken – 1 or 1 ¼ kg
  2. Brown fried onion – 4 tbsp ground
  3. Orange food colour – 2 pinches
  4. Coriander powder – 1 tsp
  5. Cumin powder – 1 tsp
  6. Green chilli paste – 1 tbsp
  7. Red chilli powder – 1 ½ tbsp
  8. Garam masala powder – 1 tbsp
  9. Crushed black pepper – 1 tbsp
  10. Ginger garlic paste – 2 tbsp
  11. Gram flour – 2 tbsp
  12. Oil – 2 tbsp
  13. Tamarind pulp – 4 tbsp
  14. Vinegar – 4 tbsp
  15. Kewra water – few drops
  16. Salt – to taste

Method:

  • Wash chicken, pat dry.
  • Then give deep cuts and tie with the thread.
  • Then nicely apply all above ingredients on the inside and outside of the chicken.
  • Leave for an hour.
  • Then bake in oven on 200 degree for 30 to 40 minutes or cook in steam for 15 minutes, then bake in oven for 10 minutes.
  • When it’s done, serve with rice.

Ingredients for Rice:

  1. Rice – ½ kg
  2. Orange food colour – 1 pinch
  3. Boil eggs – 6
  4. Bay leaves – 3 to 4
  5. Big cardamoms – 3 to 4
  6. Cloves – 4 to 5
  7. Cinnamon sticks – 2
  8. Kewra water – few drops
  9. Ghee – ½ cup
  10. Brown fried onion – ½ cup
  11. Black cumin seeds – 1 tsp
  12. Ginger garlic paste – 2 tbsp
  13. Salt – to taste

Method:

  • In a pan, put ghee and heat it up.
  • Then add cardamoms, cinnamon sticks, cloves, bay leaves, cumin seeds, and fry for a second.
  • Then add ginger garlic paste and fry well.
  • Add water according to rice, cover and cook until evaporates.
  • Then add rice and salt, mix and cook.
  • When done, add food colour and kewra water, cover and cook on steam for 15 minutes.
  • When rice and chicken done, put rice in a dish, then placed chicken in middle of rice, and garnish with boil egg slices and fried brown onion, and serve this yummy food to your family.
