Mutton Biryani Recipe
Ingredients:
- Mutton β Β½ kg
- Onion β 4 sliced thinly
- Salt β to taste
- Rice β Β½ kg
- Yogurt β 375g
- Ginger garlic paste β 2 tbsp
- Dry coriander β 1 tbsp fried and ground
- Red chilli powder β 3 tbsp
- Coriander powder β 2 tsp
- Garam masala β 2 tbsp
- Nutmeg and mace β 1 tsp
- Potato β 3 (add orange food colour in water and half boiled )
- Kewra water β 1 tbsp
- Orange food colour β few drops
- Prunes β 6 soaked in water
- Cumin seeds β 1 tbsp fried and ground
- Oil β 1 cup
- Sliced tomato, chopped mint, chopped coriander, chopped green chillies and sliced lemon β as required
Method:
- Put ghee in a pan and heat it. Add onions and fry till they turn brown.
- Then add ginger garlic paste and red chilli powder and mix well, after 1 minute add the mutton and salt and fry for 10 minutes.
- Now add water, cover and cook till mutton done.
- Boil potato in separate pan. Boil rice.
- When mutton is done then add fried cumin and coriander seeds and fry till water dries.
- Then add coriander powder and lightly blended yogurt and fry well.
- When yogurt water dries, then spread prunes, then green chopped masala, then kewra mix food colour, then garam masala powder, then lemon slices, then nutmeg and mace powder, then boiled rice and on top spread half boil potato.
- Then put on dum for 15 minutes and serve with salad and raita.
