Yakhni Pulao can be made with lamb, chicken or vegetables, but the most delicious form is with mutton. Here is a simple and spicy mutton yakhni pulao recipe for you to try.

 Mutton Yakhni Pulao Recipe

Original Afghani Pulao Recipe: English – Urdu

Ingredients:

  1. Water – 8 cup
  2. Mutton – 1 kg
  3. Salt – 1 tsp

Ingredients for Spice Bag:

  1. Whole garlic bulb – 1
  2. Dry coriander seeds – 4 tbsp
  3. Onion sliced – 2
  4. Ginger – 1 tbsp
  5. Black pepper – 20
  6. Clove – 10
  7. Cinnamon sticks – 2 inch slice
  8. Big cardamoms – 2
  9. Green cardamoms – 2
  10. Funnel seeds – 3 tbsp

Method for Yakhni:

  • Take a muslin cloth and mix all above ingredients.
  • Take a pan and add water, salt and spice bag, and cook until mutton is done.
  • Squeeze the spice bag and remove from the stock.

Ingredients for rice:

  1. Rice – 750 g
  2. Oil – ¾ cup
  3. Fried onion – 1 cup
  4. Yogurt – ½ cup
  5. Ginger garlic paste – 1 tbsp
  6. Green chili paste – 1 tbsp
  7. Red chili powder – 1 tsp
  8. Big cardamom – 1
  9. Green cardamom – 2
  10. Cinnamon stick – 1
  11. Cumin seeds – 1 tbsp
  12. Salt – to taste
  13. Black pepper – 10
  14. Cloves – 2
Spicy Yakhni Pulao: English – Urdu Recipe

Method:

  • Take a pan and put oil, add whole spices, ginger garlic paste, green chilli paste and fry for 1-2 minutes.
  • Then add mutton, fried onion, yogurt, red chilli powder and salt.
  • Mix and fry well. Then add stock and bring to boil.
  • When it starts boiling, add soaked rice and cook until water dries, then cook on steam for 10-15 minutes.
  • Serve with kachoomer salad and raita. Enjoy!
