Shahi Chicken Chargha Pulao Recipe

Ingredients for Charga
- Whole chicken β 1 kg
- Lemon juice β 2 tbsp
- Salt β 1 tsp
- Papaya paste – 1 tbsp
- Red chili powder β 1 tbsp
- Orange food color β ΒΌ tsp
- Garam masala powder β 1 tsp
- Yogurt – 1/2 cup
- Ginger garlic paste β 1 tbsp
- Fried crushed cumin seeds – 1 tsp

Method:
- Wash chicken, pat dry and give deep cuts.
- Then mix and apply all above ingredients and apply on the inside and outside of the chicken.
- Wrap with cling film and put it in the fridge overnight.
- Then heat up 1/4 cup of oil in a wok and fry chicken (without marination) all around to give it a nice brown color.
- Then add marination mixture along with 1/2 cup of water, cover and cook until chicken is tender and water dries.

Ingredients for Pulao:
- Rice β 1/2 kg
- Oil – 4 tbsp
- Fried onion – 1/2 cup
- Salt β 1 tsp
- Yogurt – 1/2 cup
- Crushed fennel seeds – 1 tsp
- Red chili powder β 1/2 tsp
- Cumin seeds – 1/2 tsp
- Green cardamom powder – 1/4 tsp
- Mace powder β 1/4 tsp
- Nutmeg powder β 1/4 tsp
- Saffron – 1 pinch
- Kewra water – 1 tsp
- Boiled eggs, almond, pistachio, silver paper and fried onion – for garnishing
Method:
- Heat up oil in a pan, then add onion, salt, yogurt and fry for 2 seconds.
- Then add soaked rice, fennel seeds, red chili powder and cumin seeds, fry a little and add water according to rice.
- When water dries, add nutmeg powder, mace powder, cardamom powder and kewra, mix and put on dum for 10 to 15 minutes.
- Dish out tasty charga pulao and garnish with almond, pistachio, silver paper, fried onon and boiled eggs.
