Tasty Vegetable Samosa Recipe

Ingredients for filling:

  1. Potatoes – 5
  2. Vegetable oil – 5 tbsp
  3. Onion – 1
  4. Grated ginger – 1 tbsp
  5. Peas
  6. Chopped coriander – 3 1/2 tbsp
  7. Water – 3 tbsp
  8. Cumin – 1 tsp
  9. Garam masala – 1 tsp
  10. Red pepper – 1/4 tsp
  11. Lemon juice – 2 tbsp

Samosa dough:

  1. Flour – 2 cups
  2. Salt – 1/2 tsp
  3. Vegetable oil – 4 1/2 tbsp
  4. Water – 4 tbsp

Method:

  • Sift together the flour and the salt. Knead in the oil and then the water to form the dough.
  • Knead the dough until it´s smooth, about 10 minutes. put it in a small bowl, cover it with a towel and leave for some time.
  •  Boil the potatoes whole, peel and slice them into small cubes.
  • Put oil into frying pan, heat up on medium flame until hot, and add the onion.
  • Stir for about 2 minutes.
  • Then add in ginger, coriander, peas, and water. Simmer for about 10 minutes.
  • Stir in potatoes, cumin, garam masala, pepper, and lemon juice.
  • Cook for about 5 minutes, then let cool.
  • Divide the dough into 8 portions. Roll into a circle.
  • Cut the circle in half, and put the filling into it, so that you can fold the pastry around it.
  • Seal it with water.
  •  Heat up oil in a wok and deep fry samosay for around 5-7 minutes, until they turn golden brown.
  • Serve warm.
