How to Make Vegetables Rice Salad, English / Urdu Recipe

Vegetables Rice Salad

Ingredients:

  1. 2 cup medium grain white rice (cooked, rinsed, and drained)
  2. 1/2 medium red onion, minced
  3. 1 clove garlic, minced
  4. 2 small purple eggplants, halved, grilled, then chopped into 1/2″ dice
  5. 2 smallish zucchini, halved, grilled, then chopped into 1/2″ dice
  6. 1/2 red bell pepper, seeded and diced
  7. 4 sun-dried tomatoes, oil packed, diced
  8. 1 cubanelle pepper, seeded and thinly sliced
  9. 1 big handful parsley leaves, chopped
  10. 2 tsp Dijon mustard
  11. 3 Tbsp vinegar
  12. 1/2 cup extra virgin olive oil
  13. Salt and pepper to taste

Method:

Cook to desired level, the rice is rinsed, drained, and combined with ingredients of your choice. First, whisk the vinegar, mustard and oil in a large mixing bowl, then put everything else in and toss to combine.
