Yakhni Pulao Biryani Recipe

Spicy Yakhni Pulao: English – Urdu Recipe

Ingredients for yakhni (stock)

  1. Mutton – 1/2 kg
  2. Medium onion – 2 whole with skin
  3. Garlic – 1 whole bulb with skin
  4. Green chilies – 4 roughly chopped
  5. Fennel seeds (saunf) – 2 tbsp
  6. Whole dry coriander – 2 tbsp
  7. Cinnamon sticks – 2
  8. Big cardamom – 3
  9. Bay leaves – 2
  10. Muslin cloth – 1 piece
  11. Salt – 1 tsp

Ingredients for Pulao:

  1. Rice – 1/2 kg
  2. Ghee – 2 tbsp
  3. Green cardamoms – 4
  4. Clove – 3
  5. Ginger garlic paste – 2 tsp
  6. Chopped green chilies – 4
  7. Yogurt – 3 tbsp
  8. Salt – to taste
  9. Yellow food color – few drops
  10. Onion – 1 sliced for bighar (fry in 2 tbsp of ghee)
How to Make BBQ Raita in Urdu – English

Method:

  • Add mutton, salt, garlic bulb, onion, cardamoms, cinnamon, bay leaves, masala bag, green chilies and 1 and half liter water in a pan.
  • Cook until mutton is tender, take out the mutton from the stock and discard onion and masala bag.
  • Remove garlic skin and add garlic flush in mutton.
  • Now heat up 2 tbsp ghee along with clove, green cardamoms, ginger garlic paste and chopped green chilies, fry for 1 minute.
  • Then add mutton fry for 2 to 3 minutes.
  • Then add yogurt, mix well. Now add stock and bring to boil.
  • Add soaked rice and salt, cook until a little bit of water dries.
  • Now spread food color and fried onion along with ghee, cover and put on dum for 15 to 20 minutes.
  • Serve with raita and kachoomer salad.
