How to Make Mazedar Achari Baingan

INGREDIENTS:-

  1. Chinese Eggplant🍆🍠 (چائنیز بینگن) – 1.5 lbs. (~750 GRAMS) (AROUND 4 EGGPLANT🍆🍠 بینگن)
  2. Oil🛢(تیل) – 5 tbsp
  3. Ginger🫚Paste (ادرک کا پیسٹ) – 2 tsp
  4. Garlic🧄Paste (لہسن کا پیسٹ) – 1 tbsp
  5. Water💧(پانی) – 4 tbsp
  6. Green Chilli Peppers🌶 (ہری مرچ) – 2 (SLICED)

MARINATION INGREDIENTS:-

  1. Salt🧂(نمک) – 1 tsp
  2. Red Chili Powder (لال مرچ کا پاوڈر) – 1 tsp Kashmiri Red Chili Powder (NOT SPICY)(تیز نہیں)(کشمیری لال مرچ کا پاوڈر) – 1 tsp
  3. Turmeric Powder (ہلدی کا پاوڈر) – 1/2 tsp

WHOLE SPICES INGREDIENTS:-

No Bake Keto Tuna Pizza

  1. Asafoetida (HING) (ہینگ) – 1/4 tsp
  2. Fennel Seeds (ثابت سونف) – 1 tsp
  3. Cumin Seeds (ثابت زیرہ) – 1/2tsp
  4. Mustard Seeds (ثابت رائی) – 1/2 tsp
  5. Nigella Sativa (کلونجی) – 1/2 tsp

GRAVY SPICES INGREDIENTS:-

  1. Red Chili Powder (لال مرچ کا پاوڈر) – 1 tsp
  2. Chaat Masala (چاٹ مصالحہ) – 1/2 tsp
  3. Mango🥭Powder (آم چور کا پاوڈر) – 1/2 tsp
  4. Kashmiri Red Chili Powder (NOT SPICY)(تیز نہیں)(کشمیری لال مرچ کا پاوڈر) – 1/2 tsp
  5. Tumeric Powder (ہلدی کا پاوڈر) – 1/4 tsp

INSTRUCTIONS for PYARE BAINGAN:

  • Take a eggplant🍆🍠 (بینگن) take a stalk of from the eggplant🍆🍠 (بینگن) cut✂️ them lentthwise. Rub the spices on to eggplant🍆🍠 (بینگن).
  • Take a wok (کڑاہی) turn the flame🔥omto MEDIUM-HIGH HEAT. Add oil🛢(تیل) know once tbe oil🛢(تیل) gets hot.
  • Add Asfoetida (HING) (ہینگ), when Asfoetida (HING) (ہینگ) cracked add whole spices stir know add ginger🫚& garlic🧄paste (ادرک اور لہسن کا پیسٹ) sauté it for 1 1/2 minute know add pyare baingan 🍆🍠 (پیارے بینگن) and roast the pyare baingan 🍆🍠 (پیارے بینگن) for 4 minutes. 4 minutes later add water💧(پانی) around baingan 🍆🍠 (بینگن) close the lid turn the flame🔥to MEDIUM-LOW HEAT.
  • Cook for another 4 minutes. 4 minutes later open the lid know add green chili peppers🌶 (ہری مرچ) and all the spices. Stir gently to incorporate and cook for 2 minutes. 2 minutes later turn the flame🔥off.
  • Open the lid and take it out on a dish.
  • Garnish with Fresh Coriander Leaves🍃(تازہ ہرا دھنیہ), and Lemon🍋Wedges (لیموں کی پھانکیں)
  • Served with Boiled Rice🍚 (آبلے ہوئے چاول), Daal Chawal (دال چاول), Roti🫓 (روٹی), OR Served as an Appetizer (کھانے سے پہلے)
