Baingan ka Bharta Recipe: English – Urdu
Ingredients:
- Baingan – 2
- Tomatoes – 2
- Green chillies – 5 to 6
- Garlic cloves – 4 to 5
- Salt – 1/2 tsp
- Cumin- 1 tsp
- Chili flakes – 1 tsp
- Red chili powder – 1/2 tsp
- Coriander powder – 1 tsp
- Curry powder – 1/2 tsp
- Fresh coriander – 2 tbsp

Method:
- Grease the baingan with oil, then make 4 slits and stuff garlic cloves and green chilies in each slit.
- Place the baingan over direct flame. Flip occasionally and roast until the eggplants are cooked from the inside.
- Then grease 2 tomatoes and an onion with oil.
- Roast the tomatoes and onion until they are cooked and the skin turns completely black.
- Peel off the outer burnt skin from the baingan and tomatoes. Take out garlic and green chilies.
- Chop the baingan finely. Grind the tomatoes, green chillies and garlic.
- Chop the onion, heat up oil in a kadai and sauté onion.
- Add tomato, green chilies and garlic paste. Fry well.
- Add salt, cumin, chili flakes 1 tsp, red chili powder 1/2 tsp, coriander powder – 1 tsp and curry powder, fry for 2 minutes.
- Add the mashed eggplant. Mix well and combine everything together.
- Cover and cook for 5 mins.
- Finally add chopped coriander leaves and switch off the flame.
- Serve with boiled rice or soft phulka.
