How to Make Ragda Patties

Ingredients for Patties:

  1. Boiled mashed potato – ½ kg
  2. Corn flour – 2 tbsp
  3. Salt – 1 tsp
  • Mash potato and add salt and corn flour, mix well and make round kebab.
  • Shallow fry in a pan from both sides until it turns golden brown.
  • Then serve with tamarind and dates sauce, green sauce and ragda.

For Ragda:

  1. Dry green peas – 1 cup
  2. Curry leaves – 10
  3. Salt – ½ tsp
  4. Ginger garlic paste – 1 tsp
  5. Turmeric powder – ¼ tsp
  6. Mustard seeds – ½ tsp
  7. Oil – 2 tbsp
  8. Fried ground cumin seeds – 1 tsp
  9. Garam masala powder – ¼ tsp
  • Take a pan, add oil fry curry leaves and mustard seeds, stir fry then add ginger garlic and fry with 1 tsp water.
  • Then add salt, red chilli powder, turmeric powder, fried cumin seeds, garam masala powder and peas, cook well.

For Green Sauce:

  1. Mint leaves – 1 cup
  2. Fresh coriander – 2 cup
  3. Onion – 1 medium
  4. Lemon juice – 2 tbsp
  5. Sugar – 1 tbsp
  6. Salt – 1 tsp
  7. Green chillies – 8
  • Add all above ingredients in a blender and blend well.
  • Green sauce is ready.

For Tamarind and date chutney:

  1. Tamarind pulp – ½ cup
  2. Dates – 2 cup
  3. Dry ginger – 1 tsp
  4. Salt – ½ tsp
  5. Red chilli powder – 1 tsp
  6. Jaggery – 1 cup
  • Soak dates in water for half an hour.
  • Then in a pan add dates, tamarind pulp, salt, dry ginger, red chilli powder and jaggery, cook well until turns into thick sauce.

For Assembling:

  • In a serving plate, place patties, then pour hot ragda, then green sauce, then sweet sauce, then thinly chopped onion, then chopped green chillies, then chopped coriander and then sev.
  • Serve this yummy snack in Ramadan aftari.
