Puff Pastry
The pastry is actually a kind of Italian pasta dough with additional butter. However, the preparation is not as simple as it seems at first sight:
it takes a long time and some practice. Anyway you can always resort to unproblematic frozen puff pastry. The precondition for a puff a success is the proper consistency of butter. This should be cooled completely before working on the dough. As the stretch and fold the dough over and over again will create thin layers of butter between layers of dough. This is what gives rise to the typical sheet of puff pastry.
Ingredients:
250g flour
25g melted butter
1 pinch salt
1 egg yolk
1 / 8 l water
250g cold butter
25g flour
Flour the work surface.
Method:
1 – Sift 250g of flour into a bowl
2 – Add 25g of melted butter and mix until crumbs form.
3 – Add salt and egg yolk. Pour water gradually and mix all ingredients.
4 – Form the dough into a ball, wrap in cling film and leave it in the fridge for 30 minutes.
5 – 259g of butter cut into cubes. Sift flour 25g top and knead well.
6 – Place the butter between two sheets of transparent film.
7 – Stretch until it measures 19 x 19 cm and cool well (approx 30 min).
8 – Roll the dough until it measured 20 x 40cm. Place butter and moisten with water over the edges of the dough.
9 – Fold the dough to wrap the butter well and press the edges.
10 – Stretch with a roller to get a rectangle.
11 – Fold the dough into three folds. Sprinkle with flour and stretch it again.
12 – Fold again to form three layers of the same dimensions. Bring to cool for 20-30 minutes.
13 – Roll the dough again into a rectangle.
14 – Fold it one last time as before. Refrigerate. Keep working as prescribed.
15 – For a base, pull it up to a thickness of 3 mm. Cut into circles using the bottom of pan.
