Delhi Ki Degi Biryani
Ingredients:
- Chicken or Mutton – 2kg
- Ginger-Garlic paste – 2tbsp
- Salt – to taste
- Cloves – 6
- Ghee – 1 cup
- Whole Black Pepper – 6
- Green Cardamoms – 5
- Onions – 3 whole
- Green Chilli paste – 1 tbsp
- Ginger flakes – 2 tbsp
- green cardamom powder – 1/2 tsp
- Kewra water – 2 tbsp
- Nutmeg and mace powder – 1/2 tsp
Method:
- In a pan put 3/4 cup of ghee, and whole garam masala, cook it for a while and then add ginger-garlic paste, green chilli paste, onions, and fry for 2 minutes.
- Now add the meat, and fry until it turns white.
- Add 1/2 cup of water and salt, cook until the meat is done and the water dries.
- Discard onions, spread ginger flaks on cooked meat, then nutmeg, mace powder, green cardamom powder, then yogurt mixture, then kewra water, then boiled rice, and on top pour ¼ cup ghee and put on dum for 15 to 20 minutes.
- Serve with mint sauce and red chilli sauce.
For Yogurt Mixture:
- Yogurt – 500g
- Yellow food colour – ¼ tsp
- Sugar – 1 tsp
Put sugar and food colour in yogurt and mix well.
Ingredients for Rice
- Rice – ½ kg
- Cloves – 5
- Cinnamon sticks – 3
- Whole Black Pepper – 5
- Salt – 1tbsp
- Bay leaf – 1
- Green Cardamoms – 5
- Cumin Seeds – ½ tsp
Method:
Put all the spices in water with rice and boil.
