Banana Bread

Ingredients:

  1. 8 T. (1 stick) butter at room temp.
  2. 3/4 C. Sugar
  3. 2 Eggs
  4. 1 C. Flour (all purpose)
  5. 1 t. Baking soda
  6. 1/2 t. Salt
  7. 1 C. Whole wheat flour
  8. 3 Large ripe bananas, mashed
  9. 1 t. Vanilla
  10. 1/2 C. Shelled walnuts, coarsely chopped

Method:

1) Preheat oven 350 degree F, grease 9″or 5″or 3″ bread pan.

2) Cream butter & sugar till light & fluffy. Add eggs one at a time, beating well after each addition.

3) Sift all – purpose flour, baking soda & salt together, stir in whole wheat flour & add to creamed mixture, mixing well.

4) Fold in bananas, vanilla & walnuts.

5) Pour mixture into pan, bake 50 to 60 min. or till cake tester comes out clean-cool in pan 10 min., then on rack.

Makes one loaf
