Paneer Butter Masala

This paneer butter masala recipe is restaurant style, made at home! With tons of authentic flavour. This is an amazing vegetarian version. It’s super easy to make vegan too – just use firm tofu and swap out the heavy cream for a vegan half and half!
Serve your paneer butter masala on a bed of basmati rice (or cauliflower rice) with naan for a hearty, satisfying and delicious meal you’ll want to make again and again.

How to Make Paneer (Cottage Cheese)
Ingredients for masala paste:
- Butter – 1 tbsp
- Oil – 1/2 tbsp
- Cloves- 3
- Green cardamoms – 2
- Cumin seeds – 1 tsp
- Onion – 1 chopped
- Ginger garlic paste – 1/2 tbsp
- Green chillies – 1 to 2
- Tomato – 2 chopped
- Salt – to taste
- Turmeric – 1/4 TSP
- Red chilli powder – 1 tsp
- Coriander powder – 1 tsp
- Curry powder – 1/2 tsp
- Water – 1/4 cup
- Cashew – 1/4 cup

- Butter – 2 1/2 tbsp
- Oil – 1/2 tbsp
- Bay leaf – 1
- Kashmiri red chilli powder – 1 tsp
- Garam masala – 1/2 tsp
- kasuri methi – 1 tbsp
- Cream – 3 tbsp
- Paneer cubes – 250 gm
- Fresh coriander (finely chopped)
Method:
- Cut the paneer into cubes and soak them in water for 15 minutes.
- In a wok, heat up butter and oil. Add cloves, green cardamom and cumin seeds, then sauté on low flame until it turns aromatic.
- Then add onion, ginger garlic paste, and sauté until the onions shrink slightly.
- Add tomato and sauté for 2 minutes. Add salt, turmeric, red chilli powder, coriander powder and curry powder.
- Mix well, and add cashew along with some water.
- Let it cook for 2 minutes.
- Cool completely and transfer to the blender and blend to smooth paste.
Method to make curry:
- Now heat up butter and oil, bay leaf and kashmiri chilli powder. Sauté for 5 seconds.
- Now add the prepared onion tomato paste and mix well.
- Cook until the oil separates from the masala paste.
- Then add garam masala powder, kasoori methi and cream. Mix and cook until curry thickens.
- Then add paneer cubes and mix gently.
- Garnish with cream and fresh coriander.
- Serve with butter naan, boiled rice or with paratha.
