Tongan Watermelon Otai Recipe
Otai is a fruit drink which originated in western Polynesia and is usually made as a refreshing accompaniment to large meals. The modern Tongan recipe most well-known today is usually a blend of water, shredded coconut and any variety of grated tropical fruits, most commonly watermelon, mango and pineapple, with watermelon being the most used in the Tongan Islands. - Watermelon – 1 medium size
- Reduced-fat coconut milk – 400 ml tin
- Ice – to serve

- Cut the watermelon into quarters and cut the flesh away from the skin. Saving some thin slices for garnish, chop the flesh into chunks and purée in a blender or processor or grate it with a fork so it has quite a rough texture.
- Stir in the coconut milk. Pour into a large jug, cover with clingfilm and chill for at least 30 mins.
- Serve in glasses, over ice, add drinking straws and garnish with slices of watermelon.
