How to Make Masala Stuffed Bihari Kabab
Bihari kabab is related to Bihar. Bihari cuisine is predominantly vegetarian. However there is also a tradition of meat-eating and fish dishes are especially common due to the number of rivers in Bihar such as the Sone, Gandak and the Ganges. There are also numerous Bihari meat dishes with chicken and mutton being the most common.
Some dishes which Bihar is famous for parathas stuffed with fried chickpea flour, spicy mashed potatoes, Fish curry and Bihari Kebab. These Masala Stuffed Bihari Kebabs are little different from regular Bihari kebabs, due to stuffing.
Ingredients:
- Meat – ½ kg
- Brown onion – 1 cup
- Ginger – 1 piece
- Egg – 1
- Garlic – 6 cloves
- Roasted chickpeas – ½ cup
- Salt – 1 tsp
- Sesame seeds – 1 tbsp
- Poppy seeds – 1 tbsp
- Desiccated coconut – 1 tbsp
- Raw papaya – 1 tbsp
- Red chilies – 2 tsp
- Cumin seeds – 2 tsp
- Mustard oil – 2 tbsp
- Oil – for fry
- Ingredients for Filling
- Onion – 2
- green chilies – 4
- Mint leaves – ½ bunch
- Coriander leaves – ½ bunch
- Salt – ¼ tsp
- Tamarind pulp – 2 tbsp
Method:
- Roast together poppy seeds, cumin seeds, desiccated coconut, sesame seeds and roasted chickpeas on a hot griddle and grind.
- Now in grinder put together meat with garlic cloves, ginger, raw papaya paste and brown onion. Grind well; add in roasted ground spices, salt, red chili, egg and mustard oil.
- Mix well and make kebab.
Method for Filling:
- In a chopper add onion, green chilies, mint leaves, coriander leaves, salt and tamarind pulp.
- Fill in prepared Kebabs and shallow fry till its color turn to brown.
