How to Make Mint Chutney in Urdu – English

Ingredients:

  1. Beef (boneless, cut into cubes) – 500 kg
  2. Beef or lamb bones – few
  3. Chana Dal (split chickpeas) – 120 gm
  4. Ginger-Garlic Paste – 1 tbsp
  5. Garam Masala (Black pepper 1/2 tsp Cinnamon sticks 2 Star anise 1 Cloves 3 Bay leaves 2 Black cardamom 2 Mace (jawatri ) 1/2 tsp)
  6. Red Chili flakes – 2 tsp
  7. Coriander powder – 1 tbsp
  8. Red chilli powder – 1 tsp
  9. Cumin powder – 1 tsp
  10. Salt  – 1 tsp
  11. Turmeric powder – 1/2 tsp
  12. Fresh Coriander  – 1 cup
  13. Oil for shallow frying
  14. Egg – 1
  15. Paprika powder – 1/4 tsp
  16. Fresh coriander – 1 tbsp

Instructions:

Cook the Beef & Lentils

  • In a large pot, add beef, bones, chana dal, ginger-garlic paste, garam masala powder,  chilli flakes, dry coriander powder, red chilli powder, cumin powder, salt and turmeric powder.
  • Add water to cover and cook on medium heat for 40-45 minutes until the beef is tender and the dal soft. Let the mixture cool.

Grind the Mixture

  • Once cooled, grind the beef-dal mixture roughly until smooth and dough-like.

Shape the Kababs

  • Shape the mixture into round or oval patties, moistening your hands with water to prevent sticking.
  • Add paprika powder and fresh coriander in a lightly beaten egg in a separate bowl.

Fry the Kababs

  • Heat oil in a shallow frying pan over medium heat. Dip the kababs in beaten egg and fry the kababs until golden and crispy on both sides.

Serve & Enjoy!

  • Serve your Beef Shami Kababs with mint chutney, onions, and a squeeze of lemon.
