How to Make Bagara Baingan: English – Urdu Recipe
Ingredients for Curd slurry:
- Sour yogurt – 250 gm
- Gram flour (besan) – 2 tbsp
- Water or add as required
Method for Curd Slurry:
In a bowl add the curd and gram flour, whisk it well till smooth.
Add water and stir very well to make a smooth mixture without lumps. Set the curd aside.
Ingredients for Kadhi masala:
- Onions – 4 tbsp chopped
- Ginger garlic paste – 1 tbsp
- Red chilli powder – 1 tsp
- Dry coriander powder – 1 tsp
- Cumin powder – 1 tsp
- Curry powder – 1/2 tsp
- Turmeric powder – 1/4 tsp
- Oil – 4 tbsp

Making Kadhi Pakora Recipe Punjabi Style:
- In a sauce pan heat up oil and sauté onion until light pink.
- Add ginger garlic paste and stir fry. Add red chili powder, coriander powder, cumin powder, curry powder and turmeric powder, fry well.
- Add curd slurry along with 2 to 3 cups of water. Stir very well and increase the flame and bring to boil.
- After the kadhi has come to a boil, then lower the heat. Add salt, bay leaves and green chillies.
- Now simmer on low flame until kadhi thickens.
- Then add the pakora to the kadhi and stir gently.
Prepare tarka or bighar:
- Heat up 1/4 cup oil, stir fry cumin seeds, whole dry red chillies, dry coriander seeds and bay leaves for 5 seconds.
- Add green chillies chopped and fresh coriander in tarka (optional) and pour on kadhi.
- Serve kadhi pakora with steamed rice or cumin rice, topped with few teaspoonfuls of ghee. You could also have kadhi with roti or paratha.
