Koyla Karahi Chicken Recipe
Karachi is known for its Karahi. There are many variations of the Karahi and this is a special Koyla Karahi which is actually cooked on the wok. Add the smoke flavor of the Coal by infusing the smoke into the dish.
Do give this recipe a try as it is very simple yet flavourful. Serve with Hot Nans/Rotis, Salad and Raita!

Koyla Karahi Chicken Recipe

Shinwari Mutton Karahi: English – Urdu Recipe
Ingredients:-
- Chicken Breast Chunk – 3 lbs (1.5kg)
- Oil – 1/2 cup
- Garlic Paste – 1 tbsp
- Ginger Paste – 1 tbsp
- Yogurt – 1/4 cup
- Crushed Tomatoes – 1 cup
- Fenugreek Leaves – 1 tbsp (KASOORI METHI)
- Charcoal – 1 piece
Keto Frozen Paratha
Spices:-
- Salt – 1 tsp
- Black Pepper Powder – 1 tsp
- Chaat Masala- 1 tsp
- Cumin Powder – 1 tsp
- Coriander Powder – 2 tsp
- Red chili Powder – 1 tsp
- Chicken Powder – 1 tbsp
- Crushed Red Peppers – 1 tbsp
- Citric Acid – 1/4 tsp
Hara Masala:-
- Cilantro – 1 large handful chopped
- Long Green chilies – 3 peppers cut in half (NOT SPICY)
- Jalapeño Pepper – 1 pepper sliced
- Red Jalapeño Chili – 1 diagonally
- Ginger – 1 tbsp piece julienne
Instruction:-
- Take a electric wok MEDIUM-HIGH HEAT. Add oil then add chicken and cook until the pink color disappears.
- Add all the spices mix well. Turn the stove up on HIGH HEAT. Add garlic paste and sauté add jalapeño peppers, yogurt, tomatoes mix and cover the lid and cook for 8 minutes on HIGH HEAT.
- Stir continuously. Add ginger paste add cilantro little 1/2 jalapeño peppers, 1/2 red jalapeño pepper, 1/2 long green peppers. Turn the stove down on MEDIUM-HIGH HEAT. Sauté together.
- Put foil in a pot and Put charcoal on foil and put kasoori methi around it put ginger julienne. Turn the stove to MEDIUM HEAT. Take 1 piece of charcoal.
- Set one charcoal on HIGH HEAT. When charcoal turns char. Add 1 drop off oil and close the lid. Give smoke for 3 minutes. 3 minutes later open the lid mix together. Turn off the stove and remove the charcoal.
- Garnish with cilantro small handful, 1 long green peppers, 1 red jalapeño peppers, ginger julienne 1/2 tbsp mix well.
- Dish out the koyla karahi sprinkle with cilantro, and julienne ginger.
- Served with Rice, Roti, Naan, Paratha.
