Kunna Gosht Recipe
A delectable Punjabi kunna gosht recipe with delicious and authentic taste due to whole spices.
Ingredients
- Mutton Shanks – 1 kg
- Ghee or oil – 150 gm
- Sliced Onion – ½ kg
- Crushed Coriander Seeds – 1 tbsp
- Salt – to taste
- Red Chili Powder – 1 tbsp
- Yogurt – 400 gm
- Turmeric Powder – 1 tsp
- Ginger Paste – 1 tbsp
- Garlic Paste – 1 tbsp
- Black Cardamom – 2
- Green Cardamom – 4
- Black Peppers – 5
- Whole Dried Red Chili – 4
- Cinnamon Stick – 1
- Cloves – 5
- Cumin Powder – 1 tsp
- Mutton Stock – 250 ml
Method
- Heat up ghee or oil and crackle whole spices, cardamoms, black pepper, cinnamon stick, Cloves and whole red chilies.
- Add onions and sauté till golden brown and then add ginger garlic paste.
- Then add mutton pieces, coriander seeds, salt, red chilli powder, turmeric powder and cumin powder, fry till mutton pieces are browned.
- Now add yoghurt and keep stirring till fat separates from the masala.
- Then add mutton stock and approximately 400 ml water- Bring the stew to a boil, cover and simmer till lamb is cooked and the gravy becomes thick.
- Adjust the seasoning and serve hot with boiled rice or tandoori naan.
