

Pahari Karahi
Ingredients:
- Mutton – 1 kg
- Mutton fat – 100g
- Ginger garlic water – 1/2 cup
- Tomatoes – 4
- Black pepper (crushed) – 1 tsp
- Red crushed chili – 2 tsp
- Red chili powder – 1 tsp
- Dry coriander seeds – 2 tsp
- Cumin seeds – 2 tsp
- Salt – to taste
- Green chilies – as required
- Ginger flakes and lemon wedges – as required
Method:
Take a wok, add mutton, mutton fat and ginger garlic water and cook until mutton is half done. Then add chopped tomatoes and black pepper. Cover and cook until tomatoes have softened. Then add red chili powder and crushed red chili, then fry well. Then add salt, green chilies, fried and crushed cumin seeds, and fried and crushed coriander seeds. Mix well, garnish with ginger flakes and lemon. Serve with onion slices.
