Tasty Vegetable Samosa Recipe
Ingredients for filling:
- Potatoes – 5
- Vegetable oil – 5 tbsp
- Onion – 1
- Grated ginger – 1 tbsp
- Peas
- Chopped coriander – 3 1/2 tbsp
- Water – 3 tbsp
- Cumin – 1 tsp
- Garam masala – 1 tsp
- Red pepper – 1/4 tsp
- Lemon juice – 2 tbsp
Samosa dough:
- Flour – 2 cups
- Salt – 1/2 tsp
- Vegetable oil – 4 1/2 tbsp
- Water – 4 tbsp

Method:
- Sift together the flour and the salt. Knead in the oil and then the water to form the dough.
- Knead the dough until it´s smooth, about 10 minutes. put it in a small bowl, cover it with a towel and leave for some time.
- Boil the potatoes whole, peel and slice them into small cubes.
- Put oil into frying pan, heat up on medium flame until hot, and add the onion.
- Stir for about 2 minutes.
- Then add in ginger, coriander, peas, and water. Simmer for about 10 minutes.
- Stir in potatoes, cumin, garam masala, pepper, and lemon juice.
- Cook for about 5 minutes, then let cool.
- Divide the dough into 8 portions. Roll into a circle.
- Cut the circle in half, and put the filling into it, so that you can fold the pastry around it.
- Seal it with water.
- Heat up oil in a wok and deep fry samosay for around 5-7 minutes, until they turn golden brown.
- Serve warm.
