Afghani Kebabs
Afghani Kebabs with Tamarind Sauce by Chef Rahat
Ingredients:
- Mutton or beef with fat – 1 kg
- Ginger – 2 inch piece
- Garlic – 4 to 5 cloves
- Onion – 4 to 5 medium size
- Coarsely ground black pepper – ½ tbsp
- Meat tenderizer – 1 tbsp
- Or papaya – ¼ cup
- Green chillies – 4 to 6
- Salt – to taste
Method:
- In a grinder, put onion, meat with fat, salt, black pepper, ginger, garlic, and green chillies, grind and make smooth paste.
- Now add meat tenderizer or papaya paste and mix well.
- Take out in a bowl and mix with hands.
- Leave for 30 minutes, then make kebabs and skew on skewers.
- Grill, BBQ, cook on gas burner or fry in frying pan on low heat until done.
- Serve with tamarind sauce, naan, raita and salad.
Tamarind Sauce
Ingredients:
- Green chilli – 2
- Ground cumin seeds – 1 tsp
- Tomato – 1
- Chaat masala – 1 tsp
- Garam masala powder – 1 tsp
- Fresh coriander – ¼ cup
- Ginger – 1 tsp
- Salt – to taste
- Tamarind pulp – ¼ cup
- Sugar – 1 pinch
Method:
- Put all ingredients in blender and make smooth sauce, if you think its too thick, then add little bit of water.
- Serve with kebabs.
