Afghani Kebabs with Tamarind Sauce by Chef Rahat

Ingredients:

  1. Mutton or beef with fat  – 1 kg
  2. Ginger – 2 inch piece
  3. Garlic – 4 to 5 cloves
  4. Onion – 4 to 5 medium size
  5. Coarsely ground black pepper – ½ tbsp
  6. Meat tenderizer – 1 tbsp
  7. Or papaya – ¼ cup
  8. Green chillies – 4 to 6
  9. Salt – to taste

Method:

  • In a grinder, put onion, meat with fat, salt, black pepper, ginger, garlic, and green chillies, grind and make smooth paste.
  • Now add meat tenderizer or papaya paste and mix well.
  • Take out in a bowl and mix with hands.
  • Leave for 30 minutes, then make kebabs and skew on skewers.
  • Grill, BBQ, cook on gas burner or fry in frying pan on low heat until done.
  • Serve with tamarind sauce, naan, raita and salad.

Tamarind Sauce

Ingredients:

  1. Green chilli – 2
  2. Ground cumin seeds – 1 tsp
  3. Tomato – 1
  4. Chaat masala – 1 tsp
  5. Garam masala powder – 1 tsp
  6. Fresh coriander – ¼ cup
  7. Ginger – 1 tsp
  8. Salt – to taste
  9. Tamarind pulp – ¼ cup
  10. Sugar – 1 pinch

Method:

  • Put all ingredients in blender and make smooth sauce, if you think its too thick, then add little bit of water.
  • Serve with kebabs.
