Ingredients:
For the kebab mixture:
- Mince meat – 500 gm
- Ginger garlic paste – 1 tbsp
- Fried onions – 1/2 cup
- Garam masala powder – 1/4 tsp
- Chilli flakes – 1/2 tsp
- Coriander powder – 1 tbsp
- Salt to taste
- Cumin powder – 1 tsp
- Red chilli powder – 1 tsp
- Paprika powder – 1 tsp
- Green chilli – 1 tbsp chopped
- Fresh coriander – 1/4 cup chopped
- Fresh mint or dry mint leaves – 10 to 12
- Baking soda – 1/4 tsp
- Charcoal – for smoke

Prepare the mixture:
- In a large bowl, combine all the kebab mixture ingredients.
- Mix well until the mixture is uniform and holds together.
- Give smoke of charcoal and refrigerate for 30 minutes to let the flavors meld.
Shape the kebabs:
- Wet your hands with a little water to prevent sticking.
- Take a portion of the mixture and shape it around a skewer, forming a cylindrical shape.
- If you don’t have skewers, simply shape the mixture into long kebab shapes.
Cook the kebabs:
- Line air fryer with parchment paper.
- Place the kebabs in the air fryer.
- Air fry at 180°C (350°F) for 8 to 10 minutes, flipping halfway through, until they are golden brown and cooked through.
Serve:
- Remove from the air fryer and serve hot with mint chutney, yogurt sauce, or your favorite dipping sauce.
- Garnish with onion rings and lemon wedges.
