Ingredients:
For the kebab mixture:

  1. Mince meat – 500 gm
  2. Ginger garlic paste – 1 tbsp
  3. Fried onions – 1/2 cup
  4. Garam masala powder – 1/4 tsp
  5. Chilli flakes – 1/2 tsp
  6. Coriander powder – 1 tbsp
  7. Salt to taste
  8. Cumin powder – 1 tsp
  9. Red chilli powder – 1 tsp
  10. Paprika powder – 1 tsp
  11. Green chilli – 1 tbsp chopped
  12. Fresh coriander – 1/4 cup chopped
  13. Fresh mint or dry mint leaves – 10 to 12
  14. Baking soda – 1/4 tsp
  15. Charcoal – for smoke

Prepare the mixture:

  • In a large bowl, combine all the kebab mixture ingredients.
  • Mix well until the mixture is uniform and holds together.
  • Give smoke of charcoal and refrigerate for 30 minutes to let the flavors meld.

Shape the kebabs:

  • Wet your hands with a little water to prevent sticking.
  • Take a portion of the mixture and shape it around a skewer, forming a cylindrical shape.
  • If you don’t have skewers, simply shape the mixture into long kebab shapes.

Cook the kebabs:

  • Line air fryer with parchment paper.
  • Place the kebabs in the air fryer.
  • Air fry at 180°C (350°F) for 8 to 10 minutes, flipping halfway through, until they are golden brown and cooked through.

Serve:

  • Remove from the air fryer and serve hot with mint chutney, yogurt sauce, or your favorite dipping sauce.
  • Garnish with onion rings and lemon wedges.
