This baked salmon and asparagus in foil recipe is very healthy and easy to make, everything is cooked in the oven wrapped in aluminum foil so that the salmon absorbs the aromas and flavors of the rest of the ingredients.

Fish Kebabs with Cucumber Raita
Ingredients:
- Asparagus – 2 bunches
- Olive oil – 6 tbsp (2 for asparagus and 4 for salmon)
- Salmon – 4 pieces
- Salt – 1 tsp
- Black pepper – 1 tsp
- Lemon juice – 2 tbsp
- Finely chopped garlic cloves – 2
- Finely chopped coriander – 2 tbsp
- Lemon slices – 3
- Sprigs of dill – 4

Method:
- Place the asparagus in a bowl and add 2 tbsp of olive oil, a pinch of salt and a pinch of pepper and mix well. Set aside.
- For the salmon, apply the rest of the olive oil, salt and pepper on both sides.
- In a small bowl, mix lemon juice, garlic and coriander. Set aside.
- Place the asparagus on four pieces of aluminium foil, top the salmon fillets and garnish each salmon with the coriander mixture.
- Place 3 slices of lemon on top of each steak and a sprig of dill, close the aluminium foil making 4 packets so that the contents do not come out.
- Bake in preheated oven on 200 °C for 25 minutes or until salmon is cooked. Serve the aluminium packets to each person.

You can bake on gas mark 7/200 C, just apply olive oil, salt and black pepper and bake for 10 to 15 minutes.
