Blinchiki Recipe

Blinchiki – a Russian dish that goes back centuries. No one knows for a fact how they were created, but many people believe that the first blinchiki appeared accidentally, after one man forgot to take his oatmeal jelly off the fire. This dish became very popular among people of all classes quite fast, since it was extremely affordable and versatile, evolving into one of the most famous Russian traditional dishes that have ever been created.

My personal opinion is I have tried thousands of variations of classic pancakes. But since I tried blinchiki (Russian Pancakes), this is one of my favourite breakfasts. Pancakes are incredibly tender, very elastic and thin.

Quick and Easy Breakfast: Weight Loss Healthy Breakfast

Ingredients:

  1. Eggs – 3
  2. Sugar – 30 gm
  3. Milk – 500 ml
  4. Salt – 2 gm
  5. Flour  – 200 g
  6. Vegetable oil – for cooking
  7. Melted Butter – 40 gm

For Serving:

French Toast Recipe

  1. Sour cream
  2. Honey or sweetened condensed milk
  3. Jam

Method for Blinchiki Recipe:

  • In a large bowl, whisk together the eggs, sugar, and milk.
  • Slowly strain and whisk the flour along with salt until combined and no lumps remain.
  • Place a large non-stick skillet or pan over medium low heat. Lightly grease with oil.
  • Once thoroughly heated, add 1/3 cup batter to the center and immediately tilt the pan in a circle to coat the bottom in a thin layer.
  • Cook until set on the top and the bottom turns golden, about 2 minutes.
  • Flip and cook until the other side is golden, 30 seconds to 1 minute. Remove to plate. Rub the pan with more oil and repeat with remaining batter. Apply melted butter.
  • Serve immediately with sour cream, jam and honey.
