Step 1: Prepare the Dough

  • In a mixing bowl, add plain flour, corn meal, salt, sugar and oil. Mix well.
  • Gradually add water and knead into a soft, smooth dough.
  • Cover and rest for 15 minutes.

Step 2: Rolling & Layering

  • Divide dough into equal-sized balls. Give rest for 10 minutes.
  • Roll one ball into a thin circle.
  • Apply a light layer of ghee and sprinkle dry flour.
  • Fold from both sides, place cheese and fold like an envelop.
  • Flatten and roll out again

Step 3: Cook the paratha

  • Place the rolled paratha on a heated tawa or skillet.
  • Cook both sides with ghee until golden brown and crispy.

Step 4: Serve

  • Serve hot with mint chutney or yogurt. Best enjoyed immediately while the cheese is still gooey!
