Chicken Roast with Vegetables

Spicy Lamb Leg Roast Recipe
Ingredients:
- Whole chicken – 1 (2 to 2 1/2 kg)
- Butter – 1 cub (1 1/2 tbsp
- Head of garlic – 1/2
- Lemon – 1 cut in slices
Spice mix:
- Garlic powder – 1/2 tsp
- Salt – 1 tsp
- Paprika – 1/2 tsp
- Cayenne pepper – 1/2 tsp
- Cumin powder – 1/2 tsp
- Thyme – 1/4 tsp
- Onion powder – 1 tsp
- Black pepper – 1/4 tsp
Vegetables:
- Red onion – 1
- Carrots – 4
- Potatoes – 3
- Chili flakes – 1/2 tsp
- Black pepper – dash

Method to Prepare Chicken Roast with Vegetables
- Rinse the chicken inside and out, pat the outside dry.
- Sprinkle spice mix inside of the chicken.
- Stuff the lemon, garlic and cube of butter.
- Tie the legs together with thread and tuck the wing tips under the body of the chicken.
- Melt 1 tbsp of butter with 2 tbsp of crushed garlic in a separate pan.
- Apply the garlic butter and again sprinkle the spice mix generously.
- Place the onion, carrots, and potato in a bowl. Toss with spice mix, black pepper, chili flakes and olive oil and spread around the casserole dish and place the chicken on top, breast side up.
- Preheat the oven to 180 C. Cook for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh.
- Remove the chicken and vegetables to a platter and cover with aluminium foil for about 20 minutes. Slice the chicken onto a platter and serve it with the vegetables.
