Spicy Lamb Leg Roast Recipe

Ingredients:

  1. Whole chicken – 1 (2 to 2 1/2 kg)
  2. Butter – 1 cub (1 1/2 tbsp
  3. Head of garlic – 1/2
  4. Lemon – 1 cut in slices

Spice mix:

  1. Garlic powder – 1/2 tsp
  2. Salt – 1 tsp
  3. Paprika – 1/2 tsp
  4. Cayenne pepper – 1/2 tsp
  5. Cumin powder – 1/2 tsp
  6. Thyme – 1/4 tsp
  7. Onion powder – 1 tsp
  8. Black pepper – 1/4 tsp

Vegetables:

  1. Red onion – 1
  2. Carrots – 4
  3. Potatoes – 3
  4. Chili flakes – 1/2 tsp
  5. Black pepper – dash

Method to Prepare Chicken Roast with Vegetables

  • Rinse the chicken inside and out, pat the outside dry.
  • Sprinkle spice mix inside of the chicken.
  • Stuff the lemon, garlic and cube of butter.
  • Tie the legs together with thread and tuck the wing tips under the body of the chicken.
  • Melt 1 tbsp of butter with 2 tbsp of crushed garlic in a separate pan.
  • Apply the garlic butter and again sprinkle the spice mix generously.
  • Place the onion, carrots, and potato in a bowl. Toss with spice mix, black pepper, chili flakes and olive oil and spread around the casserole dish and place the chicken on top, breast side up.
  • Preheat the oven to 180 C. Cook for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh.
  • Remove the chicken and vegetables to a platter and cover with aluminium foil for about 20 minutes. Slice the chicken onto a platter and serve it with the vegetables.
