How to Make Lahori Katlama: English – Urdu Recipe
|Katlama is a typical traditional Lahori snack usually available in festival season. Any where you go and you will definitely find about 2 feet diameter fried a big chapatti with strange coating on it and it is one of the delicious snacks of Lahori Halwai.
How to Make Lahori Katlama
Ingredients for Dough:
- Flour – 300g
- Salt – to taste
- Oil – 4 tbsp
Method for Dough:
Take a bowl add flour, oil, very little salt and add water slowly to knead and leave for 10 min.
For coating:
- Red chilli powder – 2 tbsp
- Red food colour – ¼ tsp
- Salt – to taste
- Tomato – 3 lightly boiled
- Dry coriander – 2 tbsp
- Cumin seeds – 2 tbsp
- Egg – 1
- Pomegranate seeds – 2 tbsp
- Ajwain – 1 tbsp
- Oil – for deep frying
Coatting:
- Take a bowl add lightly beaten egg, red chilli powder, salt, crushed cumin seeds, crushed coriander, ajwain and pomegranate seeds, mix well.
- Remove skin from tomatoes and blend in blender with ¼ tsp red colour.
- Mix this mixture in egg mixture. Add fresh coriander before applying.
Assembling:
- Make a ball from dough and roll it just like a chapatti now make marks with the help of fork or knife so that oil can pass through from it
- Now coat it with the tomato paste, with very care put the non coated side in the medium heated oil wait for 3-4 minutes till one side is cooked than turn the other side down and let it cook for more 5-7 min.
- You can make katlama with mince or potato.
- Authentic katlama will be served with a Vegetable Korma or a Rogan Korma respectively.
