Joints of Lamb including Ribs

Ingredients:

  1. Mutton joints meat – 1 kg
  2. Meat should be in big pieces
  3. Onion – 1 roughly chop
  4. Garlic cloves – 10
  5. Ginger – 2 inch piece roughly chopped
  6. Big cardamoms – 3 coarsely ground
  7. Cinnamon sticks – 2 coarsely ground
  8. Ghee – 2 tbsp
  9. Muslin cloth – 1

Method:

  • Take lamb joints, then take a cloth, add roughly chop1 onion, 10 cloves garlic with skin, 2 inch ginger piece, 3 big cardamoms, cinnamon 2 sticks, (roughly ground), make a packet and add in pan with mutton and salt along with water and boil on low heat for 2 to 3 hours.
  • Then add 2 tbsp ghee, cover and cook on low heat for 5 minutes.
  • Then discard masala packet, strain stock and fry mutton and serve with Qandhari naan or simple naan and stock.
