Joints of Lamb including Ribs
Ingredients:
- Mutton joints meat – 1 kg
- Meat should be in big pieces
- Onion – 1 roughly chop
- Garlic cloves – 10
- Ginger – 2 inch piece roughly chopped
- Big cardamoms – 3 coarsely ground
- Cinnamon sticks – 2 coarsely ground
- Ghee – 2 tbsp
- Muslin cloth – 1
Method:
- Take lamb joints, then take a cloth, add roughly chop1 onion, 10 cloves garlic with skin, 2 inch ginger piece, 3 big cardamoms, cinnamon 2 sticks, (roughly ground), make a packet and add in pan with mutton and salt along with water and boil on low heat for 2 to 3 hours.
- Then add 2 tbsp ghee, cover and cook on low heat for 5 minutes.
- Then discard masala packet, strain stock and fry mutton and serve with Qandhari naan or simple naan and stock.
