Mint Cucumber Raita
🍽️ Ingredients:
- Wheat flour – 2 cups
- Fine semolina – 1/2 cup
- Salt – ½ tsp
- Baking powder – 1/4 tsp
- Ghee – 1 tbsp
- Warm water – 1 cup + 2 tbsp
Stuffing ingredients:
- Ghee (for layering)
- Cumin seeds
- Dry mint
- Kalwanji
- Red chilli flakes
- Curry powder
- Paprika powder
- Ghee (for frying)
👨🍳 Method
1️⃣ Prepare the Dough
In a mixing bowl, add wheat flour, semolina, salt, baking powder and ghee. Make soft and smooth dough.
Cover and let it rest for 15 minutes.
2️⃣ Create the Layers
Divide the dough into 4–5 equal portions. Roll each portion into a thin disc.
Apply a thin layer of ghee on top. Then sprinkle all spices as shown in the video.
Fold from both sides, sprinkle spices and fold one last time.
Cut into two strips. Fold them in a fan (accordion) style.
Now roll it into a spiral and gently press to form a ball.
3️⃣ Roll & Cook
Roll the spiral dough ball into a circle, keeping the layers intact.
Heat a tawa (griddle) and place the paratha on it.
Cook on medium heat, flipping and applying ghee until golden brown and crispy layers appear.
4️⃣ Serve & Enjoy
Serve hot with your favorite curry, chutney, pickle, and a cup of chai.
