Strawberry Mousse Brownie Cake Recipe

Strawberry Mousse Brownie Cake Recipe

Ingredients for black chocolate brownie:

  1. Butter – 165 g
  2. Brown sugar – 250 gm
  3. Egg – 3 large size
  4. Black chocolate 70% cocoa – 225 gm
  5. Cream – 85 gm
  6. Flour – 150 gm

Method:

  • First, butter cream with brown sugar.
  • Then add the melted chocolate and mix well with butter.
  • During beating gradually add the eggs and cream.Finally, add the flour and mix well with spatula.
  • Then pour this mixture into the mould of 18 cm. in diameter and 5 cm. high.
  • Bake at about 175°C for 25 minutes. To ensure that the brownie is cooked inserting a toothpick in the centre.
  • If it comes out clean, it’s ready.
  • Let the brownie cool and store in the fridge until ready to use.

Ingredients for milk chocolate mousse and strawberries:

  1. Strawberry purée – 225 gm
  2. Gelatin sheets – 16 gm
  3. Milk chocolate 38% cocoa – 350 gm
  4. Cream – 450 gm

Method:

  • Prepare the chocolate mousse with milk chocolate and strawberries.
  • Heat up half the purée of the strawberries with the sugar and dissolve it with dissolved gelatin and mix with the rest of the purée.
  • Now add the mixture gradually over with melted milk chocolate, mix well.
  • Then add cream and fold gently.
  • Put the chocolate mousse on top of the brownies cake with strawberries.
  • Smooth and freeze.

Ingredients for poached strawberries with vinegar:

  1. Whole frozen strawberries – 500 gm
  2. Sugar – 200 g
  3. Balsamic vinegar – 50 gm

Method:

  • Prepare poached strawberries with vinegar.
  • Add strawberries in a saucepan with sugar and vinegar, bring to boil until sugar dissolves.
  • Strain strawberry juice, drain well and set aside.
  • To assemble, cut the cold brownie refrigerator with a cast of 16 cm in diameter.
  • Wrap pvc tape 4.5 cm around the cake and place poached strawberries.
  • Then pour chocolate and strawberries mousse.
  • Smooth and freeze, then remove the pvc tape and decorate with a few fresh strawberries and chocolate chips.

Ingredients:

  1. Flour – 6 ounce
  2. Eggs – 4
  3. Butter – 8 ounce
  4. Brown sugar – 4 ounce
  5. Caster sugar – 4 ounce
  6. Coca powder – 2 ounce
  7. Baking Powder – 2 tsp
  8. Vanilla essence – 1 tsp
  9. Cooking Chocolate – 4 tbsp
  10. Milk – 4 tbsp
  11. Vanilla ice cream – as required
  12. Fresh Cream – for Topping

Method:

  • Take a bowl, beat butter and sugar, til it’s light and fluffy.
  • Strain flour, baking powder and coco powder. Melt chocolate in milk.
  • Then add eggs in butter mixture, one by one, along with 1 tbsp of dry mixture and vanilla essence, beat well on low speed.
  • Then add remaining dry mixture and melted chocolate, fold with spoon.
  • Pour mixture in 2 greased 8 inches of round sandwich tins and bake for 30 minutes on 180 degrees.
  • When it’s done, remove and let it cool down completely.
  • Now before serving, place 1 cake in a platter, fill with scoop of vanilla ice cream, cover with second cake on top.
  • Then pour chocolate ganache and drizzle with cream and serve.

Chocolate Ganache

Ingredeints:

  1. Cooking chocolate – 8 ounce
  2. Cream – 4 ounce

Method:

  • Take a pan, just warm up cream and add chocolate pieces and let it melt.
  • Put in the fridge, let it cool down and your chocolate ganache is ready to use.
